Living abroad and being a big fan of sloe gin we have adapted the recipe using our local berries - a wild cherry called shimaruku and a small seedy fruit called ronde birimbi and can happily report that both make wonderful liqueur and are delicious too! When I was reading your delicious sounding Christmas cake recipe (I haven’t made one. Thinking this was an error I need to rectify... Once I’ve put oranges and cloves on the woodburner... Ralph’s going to take one look at this development, nod towards it and just say ‘Tom and Kathy?’ 😂) and I noticed your inclusion of frozen eggs. I’m lucky that some new hens this spring means we’re still getting a steady trickle of eggs but I did waterglass some earlier this year just in case and I was wondering whether you have a preference for frozen over waterglassed and if so, why? I’ve never frozen eggs (whisked egg size Tupperware sounds cute! 😂) and I’m wondering if I should next year!
